The Sartori family crest nods to the people, places and experiences that define them.   The ship icon refers to The Finlandia, the steamer that carried our founder Paolo Sartori to America, where he would later achieve his own American Dream, starting in 1939 when he started the S & R company. The cows are an acknowledgement of the farm-to-fork ethos and of the special relationships they have with family farmers, many of whom have supplied milk for several generations. They also have an image of the state of Wisconsin, not just because it is the source of the finest cheese anywhere, but because it is their home that has shaped them as much as anything else. Finally, the crest is topped by a crown - which represents the aspiration to make the best cheese in the world - to which they just added a 4th star since the latest generation of the Sartori family just recently joined the business.

Sartori Company was founded by Paolo Sartori, an Italian emigrant, in 1939.  They are now in their third generation of family ownership under Jim Sartori with the fourth generation involved.  In addition to making some of the finest Italian style cheese in the world, Sartori cheesemakers created BellaVitano®, an American original cheese with international acclaim.  Sartori boasts three of the country's 51 master cheesemakers on staff.  All cheese sold at retail is certified r-bst hormone free.

SarVecchio® - is made by Wisconsin Master Cheesemaker Larry Steckbauer at Sartori Company, who is certified in the production of Parmesan and Romano cheese.  The milk for production is sourced from local family owned dairy farms and the cheese is made using their own unique cultures.  SarVecchio is an extra aged parmesan cheese that begins with a subtle fruity note and finishes with caramelized parmesan flavors that blossom on your palette.  SarVecchio has a unique creamy texture and unlike other parmesans, it doesn't have a heavy salty note and is outstanding eaten alone or on/in food.
