The Wisconsin Sheep Dairy Coop is a premier maker of artisanal
sheep milk cheeses and the single largest source of high quality
sheep milk for cheese plants in the United States. Comprised of 15
family farms that milk between 100-400 sheep seasonally, the herd
is comprised of the East Friesian and Laucaune breeds. During
the spring and summer, the sheep graze freely on pasture and fed a
limited amount of natural grain while being milked. The
cheese is made under the direction of Bob Wills at Cedar Grove
Cheese Company in Plain, Wisconsin and aged through Bear Valley
Affinage with Jen Brozak.
Honored at 2006 ,2007 and 2008 American Cheese Society Awards
and in 2009 U.S. Championship Cheese Contest
Mona is made with a blend of sheep milk and cow milk and aged a
minimum of six months, Mona develops a very distinctive, mild and
pleasant taste with a firm and somewhat moist texture with notes of
grass, nuts and browned butter. The more aged wheels become
slightly drier and more crumbly.
